Ingredients and Equipment:
The Snickers bars are easy to prepare—quick and fun. They require minimum time, just a few easily found ingredients, and no fancy equipment.
Small Square shallow tin cake, or brownie bar tray- see suggestions.
High-speed blender or good quality stick blender.
For years, I used the Ninja brand but gave it away to a friend when I was moving out. I then purchased the Magimix brand with a glass jug, and I can highly recommend it. It’s fast, powerful, easy to clean, and solid.
Snickers Bars Caramel Layer:
- 2 cups of soft pitted dates.
- Pinch of salt.
- 3 tablespoons of almond or peanut butter (Choose the brand without oil and sugar added).
- 1 teaspoon of vanilla extract.
Snickers Bars Base Layer:
- 1 cup of oat flour (or alternative- see final notes).
- Half of the caramel that you have already prepared.
Chocolate Top Layer:
- Block of vegan chocolate.
- 1/2 cup of peanuts.
Preparation:
Step 1: Prepare the caramel:
- Soak the dates for 10 minutes in hot water.
- Ensure the dates are properly drained by using a colander or gently squeeze out any excess water with your hands.
- Blend the dates in your food processor or blender until smooth.
- Add your nut butter of choice, vanilla extract, and a pinch of salt. Blend until well combined.
- Set aside half of the mixture and leave the remaining half in the blender.
Step 2: Prepare the nutty base:
- Add oat flour or an alternative to the blender where you reserved half of the previously prepared caramel.
- Combine oat flour and caramel in a food processor until it reaches a slightly wet dough consistency.
Step 3: Prepare the chocolate top layer:
- Melt the chocolate over a pot with boiling water until it reaches a smooth, runny consistency.
- Chop the nuts.
Step 4: Assemble your vegan snickers:
- Arrange the layers in the shallow square dish or brownie tin as follows: base, caramel, nuts, and melted chocolate.
- Let it set in the fridge or freezer for 10-15 minutes, then cut into your desired shapes and devour like a true dessert enthusiast!
Final Suggestions:
- You have the option to swap oat flour for almond meal.
- If you don't have oat flour, you can simply blend 1 cup of oats in a food processor or blender until they reach a fine, coarse texture.
- To create a gluten-free version of these bars, you can use gluten-free oats.
- Feel free to use any nuts of your preference.
- You can store it in the freezer for up to one month. I suggest cutting it into individual bars portions before freezing for easier division.
- If you want to add an extra kick of protein to your bars, incorporate your favorite (non-fruity) protein powder into the base layer. To counter potential dryness, consider using additional soaked dates for extra moisture—add an extra half a cup of dates. Plant-based protein powder with a peanut butter flavor works exceptionally well for enhancing the taste of this recipe.
- Store-bought almond butters can be expensive, so consider making your own at home using almonds. Simply roast 3 cups of almonds in an oven preheated to 180 degrees Celsius for 10 minutes. Remove the pan and allow the almonds to cool for at least 10 minutes before proceeding. Transfer the cooled almonds (even if slightly warm) to a large food processor fitted with an 'S' blade. Start processing for 5 minutes or until they reach creamy consistency.
