Oil free salad
Ingredients
- 1 large potato or sweet potato (boiled for 7 minutes and cooled down)- cut into cubes.
- Small head of lettuce- I prefer Romain lettuce- torn to smaller pieces.
- 1 small red onion- I find it milder than white one.
- ½ avocado - sliced.
- 1 medium tomato - chopped.
- 1 small cucumber - chopped.
- 1 small sweet red pepper.
- Pack of sprouts- sunflower, any beans or broccoli.

Dressing
- 1 cooked beetroot
- 1 glass of soaked sunflower seeds
- 2 gloves of garlic
- 2 teaspoons of nutritional yeast
- salt, pepper and splash of water
Method
- Place your potato in the air fryer- no oil needed and fry for 5 to 7 minutes until golden crisp.
- Soaked and drained sunflower seeds place in a blender and blend together with cooked beetroot, nutritional yeast, salt, pepper, garlic, and water- blend until smooth. If to thick- add more water.
- Assemble the salad in a big bowl and mix well with homemade dressing!
