Ingredients for Vegan Potato Lasagne (Serves 4)
For this recipe, you’ll need a blender to make the creamy vegan cheese sauce, ensuring it’s smooth and well-blended. You’ll also need an ovenproof dish to layer and bake the veggie pie, allowing the flavors to meld together and the top potatoes to become golden and crispy.
Potato Layers
- 4 large potatoes, peeled and sliced into ½ cm rounds
- Salt, for boiling
Veggie Filling
- 1 large onion, chopped
- 1 large courgette (zucchini), grated
- 2 small carrots, grated
- Mexican-style spice mix (or your favourite spice blend)
- Salt and pepper, to taste

- 3 tbsp tomato paste
- ½ cup water
Vegan Mince
- 250g vegan mince (soy mince for gluten-free option)
- 1 tsp olive oil (optional)
- Extra spices (optional)
Vegan Cheese Sauce
Instructions:
- Boil the sliced potatoes in salted water for about 7 minutes until just tender. Drain and set aside to cool slightly.
- In a heated pan, sauté the chopped onion until golden. Add grated courgette and carrots, cooking until softened (5–10 minutes). Stir in your spices, salt, pepper, and tomato paste. Add water and let it simmer for 7 minutes
- Cook the vegan mince in a separate pan with olive oil (optional) until browned. Mix in spices for extra flavor. Combine with the veggie mix for a rich, meaty texture.
- Prepare the sauce from my Plant-Based Pleasures eBook, or substitute with your favorite store-bought vegan cheese sauce. Make sure it's thick and creamy!
- Preheat your oven to 180°C (350°F). In a medium baking dish, start by laying half of the potato slices on the bottom. Spoon over half of the veggie mince mixture and spread it evenly. Drizzle with a generous amount of vegan cheese sauce. Repeat with another layer of potatoes, the remaining mince mixture, and more cheese sauce. Finally, top with the last layer of potatoes and spread the rest of the cheese sauce over the top. Smooth it out with a spoon or spatula so the entire surface is covered and ready to bake.
- Bake for 30 minutes, or until the top is golden brown and the potatoes are fully cooked.
- Let the dish cool slightly before slicing. Serve with a crisp green salad or steamed greens for a complete meal.
