Ingredients:
- 1 cup of raw cashews, soaked overnight in water, or 20 minutes in hot water (can substitute with 1 1/2 cups of sunflower seeds, soaked for 20 minutes in hot water)
- 1/2 cup of nutritional yeast
- 1-2 garlic cloves
- 1/2 cup of water from sauerkraut or pickled cucumbers (optional: add 2 tbsp of sauerkraut for a thicker texture).
- 1/2 cup of unsweetened soya milk (can substitute with cashew milk).
- 1-2 tbsp of lemon juice
- Salt and pepper to taste
- Small block of firm tofu (crumbled into fine crumbs)
Instructions:
- Soak Nuts or Seeds - Soak the raw cashews or sunflower seeds in hot water for 20 minutes or, preferably, overnight in room temperature water.
- Drain the soaked nuts or seeds well using a colander.
- Place them in a blender (a high-quality hand blender can also work).
- Add the nutritional yeast, garlic cloves, sauerkraut water, soya milk, and lemon juice to the blender.
- Blend until you achieve a smooth cream.
- Check the consistency of the mixture. If it's too thick, add a bit more plant milk or sauerkraut water. If it's too runny, add more sauerkraut.
- Transfer the cream to a container.
- Crumble the tofu into small pieces, approximately the size of minced meat, and incorporate it into your cream cheese to provide a grainy texture.
- Let the cream cheese chill in the fridge, although it can be enjoyed immediately. The flavor is enhanced when it's cold.
