To make this Vegan Apple Pie, you’ll need a 28 cm (11-inch) springform pan, which will make it easy to remove the pie from the pan after baking.
Apple Pie Crust Ingredients:
- 400 g all-purpose flour
- 100 g powdered sugar
- 1 tsp baking powder
- 200 g cold vegan margarine
- A pinch of salt
- 30 ml/ 2 tbsp cold water
For the Apple Filling:
- 1500-1600 g tart apples (e.g., Granny Smith)
- 50 g sugar
- 1 tsp vanilla sugar
- 1-2 tbsp cinnamon (depends how much you like it)
For the Custard:
- 850 ml Soy milk
- 2 packets of vanilla-flavored pudding powder (or cornstarch with vanilla extract)
- 45 g sugar
Instructions:
Step 1: Prepare the Pie Crust
- In a mixing bowl, combine the all-purpose flour, powdered sugar, baking powder, cold vegan margarine cut into small pieces, and a pinch of salt. Quickly knead the dough until it comes together. Add cold water at the end to help bind the dough.
Step 2: Divide and Chill the Dough
- Divide the dough into two parts—one larger for the base and one smaller for the topping. Wrap the smaller portion in plastic wrap and place it in the freezer.
Step 3: Pre-Bake the Crust
- Press the larger portion of the dough into the bottom of the 28 cm (11-inch) springform pan. Preheat your oven to 180°C (350°F) and bake the crust for about 20 minutes, or until it turns golden brown. Let it cool once done.
Step 4: Prepare the Apple Filling
- Wash, peel, and core the apples. Cut them into small pieces. Place the apples in a pot, add the sugar, vanilla sugar, cinnamon, and water. Cook the apples for a few minutes until they become soft.
Step 5: Add the Apple Filling
- Spread the cooked apple mixture evenly over the pre-baked pie crust.
Step 6: Prepare the Custard
- In a pot, heat about 600 ml of soy milk. In a separate bowl, mix the remaining soy milk with the pudding powder or cornstarch and sugar. Once the soy milk in the pot is boiling, add the pudding mixture while stirring constantly. Bring it back to a boil until the custard thickens
Step 7: Layer the Custard
- Pour the custard over the apple layer, spreading it out evenly.
Step 8: Top with Crumbled Dough
- Remove the smaller portion of dough from the freezer. Grate it over the top of the custard layer to create a crumbly topping
Step 9: Bake the Pie
- Return the pie to the preheated oven and bake for about 50 minutes at 180°C (350°F), or until the topping is golden and crispy.
Step 10: Cool and Serve
